The grapes are harvested by hand and subjected to a careful selection.
Viticulture scrupulously respects the parameters of sustainability and respect for the environment. We do not use herbicides and pesticides.
This Cava is a limited edition that is only produced when the vintages are exceptional.
Vinification of each variety separately. Pressed extraordinarily smooth and fractionation of the juice below 50%, cooled when pressed, and followed by a static clarification between 24 and 48 hours. Fermentation temperature of 15 to 17 ° for twenty days. Second fermentation in the bottle during at least 24 months according to the traditional method.
