Cecina de Leon
This ham is made from Spanish beef and is then dried.
Cecina de Leon is a soft beef smoke that almost melts in the mouth. The meat comes from the hind leg, the tapa, from Rubia Gallega cattle, which graze in the Castilla y Leon region. The fat contained between the muscles gives the meat a full, soft taste. The grasses and herbs that the cattle eat add a slightly spicy tone.
A traditional piece of meat, that has been produced for generations according to strict rules and is provided with an I.G.P. (a protected geographical indication).
Delicious as an aperitif with fried salted almonds.
