Peraj Ha’abib (Flor de Primavera)
Made under the strict supervision of the “Orthodox Union“ supervised by Rabbi Nachum Rabinowitz and Rabbi Akiva Katz/ Karen Consulting, Lo Mevushal – Kosher Le Pesaj.
Kosher red wine from DO Montsant made with 50% red grenache, 30% cabernet sauvignon and 20% Samsó (carignan).
Temperature controlled fermentation (24-28ºC) with indigenous yeast with all varieties are vinified together.
Malo-lactic fermentation started in tank and finished in barrel.
Aged 12 months in new French oak barrels (220 L) with light and medium toasted. After blending, aged for 3 months in tank before bottling.
Dark, full saturated red; red-black berry; vibrant, bright aromas of cherry, plums, currant; fine toasty and coffee flavors; rich seductive cherry fruit; black berries; complex, sophisticated, elegant; rich and full-bodied; ripe but soft tannins; smooth glycerin sweetness; fresh and mineral; very long finish. Wine with seriously long ageing potential.
Production: 7500 bottles.
Pairing
Venison, veal, BBQ, roasted beef, stew, game, roasted lamb chops with ratatouille, grilled vegetable, cheeses, roasted oxtail.
