Jam of sweet red pepper cooked in wood with vermouth and herbs of provence

A delicious jam. Sweet red peppers come from Almería –southern Spain- and we add red vermouth from Tarragona –southern Catalonia- and herbs of Provence at the very end of cooking the jam. All Mediterranean flavours are concentrated in the jar and make us remember hot summer afternoons peeling peppers for the dinner in a patio. It’s really nice with a Confit of Cod Fish, with a Tataki of Tuna Fish or a Tartar of Beef or other type raw meat. It’s also nice to spread on a “tapa” o to put together with a Chocolate Ice Cream with Chantilly. Also good with cold meat like “salchichon”,” lomo” and “chorizo”.
