Jam of Onions, Dried Grapes and “Garnacha” Wine

For those who love onions, it’s one of the best jams made at El Rebost de l’Empordanet®. The onion is cooked slowly with a bit of salt and oil until it gets into a jam. Thanks to the dried grapes and the sweet “Garnacha” wine, jam’s sweetness is very soft.
It is nice to put together with the smoked salmon, although many cooks are using this one for the Foie Mi-cuit.
It’s also nice for the BBQ meat.
