Flor de sal de Taffoni
Natural salt flower (fleur de sel) of the Cap de Creus (Girona) collected by hand in the reefs of Mar d’Amunt.

Salt reaches these rocks (squash in geological terms) directly (waves) or indirect (marine humidity) and is deposited in the holes (also called taffoni or alveoli) characteristic of these rocks. The Sun and the Tramontana wind are in charge of vaporizing the water from the taffoni, leaving the formation of salt crystals with a unique and highly appreciated taste at the gastronomic level. Moreover, it contains a high concentration of magnesium and potassium.

The formation of this salt depends of extraordinary conditions and most of the times its collection is unsuccessful.
