Bombolles Ancestral macabeu is an sparkling wine produced with the ancestral method or Pet-Nat (abbreviation of Pétillant Naturel) made with 100% macabeu grapes. This wine was fermented for one year in the bottle and is only partially disgorged. This is why you will see sediment in the bottle.

Ancentral method is a return to the old, original tradition of sparkling wine production. Unlike the traditional method, pét-nats do not undergo a second fermentation. In pét-nat production, the natural fermentation is interrupted, the wine is bottled and finishes fermentation in the bottle.
