Olive Oil advice

Lo Rebost garantees that the Extra Virgin Olive Oil (EVOO) is distributing is true EVOO. We are very close to the producer and check every year that the quality of our Gran Degustus and the others EVOO are Extra Virgin. We give advice to restaurants and private people on how to taste, keep and use correctly the EVOO and evaluate the quality of the Olive Oil they use. What is EVOO?
The answer to this simple question is not easy. To make it simple, we can say that in the EVOO olives are pressed only once and the temperature is not exceeding 30°C during the entire procedure (milling, beating, pressing/extraction). Very important is that no defects are found in the produced olive oil.

EVOO has to fulfill strict chemical requirements but also specific organoleptic properties.
Olive Oil is the only food product that its organoleptic analysis is strictly regulated by European law based on legislation of the International Olive Oil Council (I.O.C).
